Warming Vegetable Soup with Ginger

INGREDIENTS
1-pound orecchiette pasta (or sub your favorite pasta)
3 tablespoons olive oil
1 small yellow onion, diced
3 large garlic cloves, minced
28 ounces canned diced tomatoes 1 teaspoon dried oregano
1 teaspoon dried thyme
1⁄2 teaspoon crushed red chili flakes 1⁄2 teaspoon sea salt
1⁄4 teaspoon ground black pepper 1⁄2 cup heavy cream
1 1⁄2 cups shredded parmesan
DIRECTIONS
- Cook pasta based on package instructions. Drain and set aside.
- Meanwhile, heat oil in a large skillet over medium heat. Add onion and sauté until onions are translucent. Add garlic and cook for another minute.
- Add tomatoes, oregano, thyme, chilies, salt and black pepper. Bring to a gentle simmer for 10 minutes.
- Remove tomato sauce from the heat and fold in heavy cream, parmesan, and pasta.
